Xanthan gum is a natural polysaccharide obtained through fermentation and is a rich source of dietary fiber. It is widely used as a food additive to thicken and stabilize the texture of foods. The gum consists of glucose, mannose, and glucuronic acid, making it a light and water-soluble compound. This property allows xanthan gum to be added to a variety of dishes, such as oatmeal, smoothies, sauces, syrups, high-protein ice cream, and baked goods.
